Recipe Ingredients for Barbie's Orzo with roasted veggies

8 serving Trader Joe's orzo
1 cup, cubes Eggplant
1 large raw Zucchini
1 cup, sliced Squash, Summer, All Varieties
2 cup, sliced Fennel, Bulb
0.5 medium raw Onion Red
2 cloves, raw Garlic
2 cup, chopped Peppers, Sweet, Red
2 tsp 100% Pure Canola Oil
2 lemon yields Lemon Juice
1 serving, raw Cilantro
1/4 tsp Sea Salt
0.5 tsp Pepper, Black

Recipe Directions for Barbie's Orzo with roasted veggies

  1. Prepare orzo according to package instructions

  2. Toss diced veggies with a bit of canola oil and salt and pepper. Roast at 425F for 40min

  3. Mix 1/3cup canola oil with 1/3cup lemon juice and salt and pepper to taste.

  4. Mix orzo with veggie and toss with salad dressing
