This recipe is from Bonnie Stern's Simply HeartSmart Cooking, p170. "This recipe is a hit with both children and adults. It can be served warm or cold, and you can cook whole chicken breasts instead of fingers. I serve these chicken fingers over rice as a main course, or as an appetizer with a yogurt dip for the kids and a spicy salsa dip (page 43) for adults."

Recipe Ingredients for Barbecued Chicken Fingers (Simply HeartSmart Cooking)

16 oz Chicken
2 tbsp Honey, Strained Or Extracted
0.13 cup Lemon Juice
1 tbsp Ketchup
1/4 teaspoon Cumin, Ground
0.5 tsp Salt, Table

Recipe Directions for Barbecued Chicken Fingers (Simply HeartSmart Cooking)

  1. Cut each chicken breast into 4 or 5 strips. Pat dry.

  2. In a bowl, combine honey, lemon juice, ketchup and cumin. Add chicken and marinate in refrigerator for up to 8 hours.

  3. Just before cooking, stir salt into chicken mixture. Preheat barbecue or broiler. Grill chicken pieces for 5 to 7 minutes per side, depending on thickness, until just cooked through.
