Makes two pizzas. Serving size 4 slices or half pizza. Doubled recipe but not serving size from mayo clinic recipe. Original recipe called for 12-inch Italian crust, but I removed it and added Mayo's crust recipe from Tomato Basil recipe. I need to compare the pizza sauce and bbq sauce labels b/c I think I can use half or quarter the amount of bbq sauce for the pizza sauce on the crust.

Recipe Ingredients for Barbecue Chicken Pizza

2 cups whole-wheat flour
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
2 teaspoons yeast
2 teaspoons olive oil
1 1/2 cups warm water
2 cups pizza sauce
2 green peppers, 16 rings
2 tomatos, sliced
2 cups mushrooms, sliced
8 ounces cooked chicken breast, sliced about 1-inch thick, with all visible fat removed
4 tablespoons barbecue sauce
2 cups reduced-fat mozzarella cheese, shredded

Recipe Directions for Barbecue Chicken Pizza

  1. Preheat the oven to 375 F. Lightly coat a 10-inch round pizza pan with cooking spray.

  2. In a large bowl, combine the flours, salt, sugar and yeast. Add the oil and warm water and mix well.

  3. Turn the dough out onto a generously floured work surface. With floured hands, knead the dough for 1 minute. If dough is too sticky, add flour 1 teaspoon at a time. Gather into a loose ball. Cover dough with plastic wrap and let rest 10 minutes.

  4. In a small bowl, stir together the tomatoes, basil, black pepper and garlic powder.

  5. Roll out dough and press into the prepared baking pan.

  6. Preheat the oven to 400 F.

  7. Spread the sauce evenly over the pizza crust. Add the pepper, tomato, mushrooms and chicken. Drizzle barbecue sauce over the pizza and top with cheese.

  8. Bake about 12 to 14 minutes. Cut the pizza into 8 slices and serve immediately.
