Recipe Ingredients for barbecue chicken cilantro pizza

6 ounces cooked boneless chicken
1/2 red onion, sliced in thin strips
2 tablespoons fresh cilantro, stems removed
1/4 cup barbecue sauce
1/2 cup warm water
1/2 package active dry yeast
1/2 teaspoon sugar
1/4 teaspoon salt
2 tablespoons olive oil
1 1/4 cup whole wheat flour

Recipe Directions for barbecue chicken cilantro pizza

Make pizza dough by dissolving yeast in the warm water, in a slightly warmed metal mixing bowl (warm the mixing bowl by running it under hot water). Then stir in flour, sugar, salt and 1 tablespoon olive oil. Stir vigourously for 20 strokes. Mixture will form a ball. Let rest 5 minutes in a warm place. Preheat oven to 425. Put dough on a lightly greased pizza stone or pan. With floured hands, pat dough into an 11 inch circle. Spread 1 tablespoon of olive oil on the dough with the back of a spoon, dice the cooked chicken into small pieces, and place the chicken evenly around the pizza. Add red onion slices, distributed evenly, and sprinkle with fresh cilantro. Finally, drizzle the barbecue sauch all over the top. Bake for 20 minutes or until crust is lightly browned.
