Tasty Chicken Chili. Serve with shredded Monterey Jack Cheese, cubed avocados, and non-fat sour cream.

Recipe Ingredients for Barbara's White & Black Bean Chicken Chili

2 pounds Chicken Breasts, boneless, skinless, cubed
32 ounces White Kidney Beans, cooked, drained
32 ounces White Beans, cooked, drained
48 ounces Black Beans, cooked, drained
4 cups Chicken Broth
2 Chili Peppers, minced
1 onion, chopped
3 tbsp. Mexican Chili Powder
1 tbsp. Cumin, ground
1/2 cup Cilantro, chopped
2 Chili Peppers, chopped

Recipe Directions for Barbara's White & Black Bean Chicken Chili

  1. In large non-stick skillet, sprayed with vegetable oil, brown and cook cubed chicken breasts. Remove and drain on paper towels. In same skillet, saute onion and 2 Jalapeno Chili peppers, minced.

  2. Put chicken, onion, Jalapenos in large soup pop, add all the beans( I use canned beans), chicken broth, 1 can of diced green chili peppers, add Mexican Chili powder, cumin, salt and pepper to taste. Heat to a boil, turn down, and simmer for approxiamely 40 minutes-I generally let it simmer for longer. Taste, and adjust seasonings to taste. Remove from heat. Serve with toppings of one and a half-cups shredded Monterey Jack Cheese, cubed Avocados, and a dollop on non-fat sour cream. Makes 8 to 10 generous servings.
