Delicious slow-cooked meal. *This recipe calls for 2 chicken drumsticks, 1 chicken breast half, and 3 chicken thighs, but wouldn't recognize the chicken thighs.

Recipe Ingredients for Barbara's Stewed chicken and Chive Dumplings

2 chicken drumsticks
1 chicken breast, half
3 chicken drumsticks
1 tbsp. canola oil
1 tbsp. Smart Balance
1 cup chicken broth, low sodium
2 tbsp. lemon juice
1/4 cup flour, all purpose
2 tsp. poultry seasoning
2 tsp. paprika, smoked
1 tsp. onion powder
1 tbsp. thyme
1 3/4 cup flour, self-rising
1 tbsp. chives, chopped
3/4 cup skim milk

Recipe Directions for Barbara's Stewed chicken and Chive Dumplings

Wash chicken pieces and pat dry. Mix flour, and spices in large bag. Heat large skillet on medium-high heat, add canola oil and Smart Balance. When hot drop chicken in bag to coat with flour and spices, put in hot skillet. Cook 5 to 7 minutes, turn, and brown other side. Add chicken broth and thyme. Turn heat down to simmer. Simmer 20 minutes and turn chicken. Cook an addition 20 minutes. Mix self-rising flour, milk and chives. Drop by spoonsful onto hot cooking chicken. Cook uncovered 10 minutes. Cover skillet and cook and additional 20 minutes. Serve.
