Recipe Ingredients for Barbara's Split Pea and Canadian Bacon Soup

2 cups peas, dried, split
4 cups water
6 cups chicken broth, less-sodium, low-fat
1/2 cup celery, minced
1/2 cup onion, chopped
2 carrots, diced
1 cup potatoes, red,cubed
1 cup potatoes, yellow cubed
1/4 tsp pepper
6 slices Canadian Bacon, diced
3 strips Bacon, cooked, crumbled
1 tbs. olive oil

Recipe Directions for Barbara's Split Pea and Canadian Bacon Soup

  1. Rinse peas in colander, making sure they are free from any stones. Add olive oil to large pot, saute celery, onion, carrots and potatoes. Cook 6 minutes. Add Canadian Bacon and crumbled bacon. Add peas and broth, heat to boiling. Reduce heat and simmer 2 1/2 to 3 hours or until peas are very soft. Use a potato masher to mash up vegetables. Season to taste. Should be very thick.

  2. If desired, thin with milk or water. Season to taste.
