Great cold weather roast. Serve with baby Yukon potatoes and baby carrots.

Recipe Ingredients for Barbara's Roast Beef

1 1/2 pounds Beef, Round, Tip Roast
1 1/2 tsp. salt
1 tsp. Pepper
3 tbsp. Horseradish, prepared
2 sprays Pam
10 oz. potatoes, baby, Yukon, washed and halved
8 oz. carrots, baby, peeled
8 oz. onions, Pearl, peeled and halved

Recipe Directions for Barbara's Roast Beef

Spray oven proof cooking dish with Pam. Sprinkle roast with salt and pepper, brush sides of roast with Horseradish; preheat oven to 350 degrees. Insert meat thermometer in center of roast, put in oven. Roast for approximately 40 minutes, check thermometer.(See temperature wanted for medium-rare below) Add vegetables to roast and continue cooking until thermometer reaches 135 to 140 degrees, and vegetables are tender-approximately 30 minutes longer.
