Tasty banana bread, without nuts or raisins. Can be added but will raise calories and grams of fat. Makes 2 loaves.

Recipe Ingredients for Barbara's Pumpkin Bread

2/3 cup shortening
2 2/3 cup Splenda
1 cup egg substitute
1 pound pumpkin, canned
2/3 cup water
3 1/3 cups flour, all-purpose
2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. cinnamon
1 tsp. cloves

Recipe Directions for Barbara's Pumpkin Bread

  1. Heat oven to 350 degrees. Grease two 9x5x3-inch loaf pans. In large bowl, shortening, and Splenda until fluffy. Stir in egg substitute, pumpkin and water. Blend in flour, baking soda, salt, baking powder, cinnamon and cloves.

  2. Pour into pans. Bake about 70 minutes or until wooden toothpick inserted in center comes out clean.

  3. Cool loaves in pans 5 minutes, transfer to racks to cool completely.
