Recipe Ingredients for Barbara's Modified Mexican Meatloaf

1 Cooking spray
1 pound (16-ounce) of ground beef, extra lean
2 eggs, large
1/4 cup (2-ounce) bread crumbs
1 medium onion, chopped
1/2 tsp chili powder
1/4 tsp ground cumin
4 ounce green chili peppers, diced
8 ounce enchilada sauce

Recipe Directions for Barbara's Modified Mexican Meatloaf

  1. Preheat oven to 375 degrees F.

  2. Coat a broiler pan with cooking spray.

  3. In a large bowl , mix beef, turkey, egg whites, stuffing mix, onion, chili powder, cumin, chilies, and half of enchilada sauce together.

  4. Shape into an oval with your hands and place on prepared broiler pan.

  5. Cook for 1 hour.

  6. Top with remaining enchilada sauce and bake for 5 minutes more.

  7. Slice into 6 pieces and serve.
