Recipe Ingredients for Barbara's Huevo's Ranchero's

1 tortilla medium, corn
1/2 cup fat free Refried Beans
2 tbsp. Salsa
1 oz. cheddar cheese, shredded
1 egg, large, poached
1 tbsp. fat free Sour Cream

Recipe Directions for Barbara's Huevo's Ranchero's

On a griddle on medium-high heat, heat tortilla through. In microwave safe bowl, heat refried beans for about 3 minutes-cover with plastic wrap to avoid splatters. On plate put tortilla, cover tortilla with heated refried beans. Meanwhile, in a microwave safe small dish or ramekin, put egg, poking yolk with a toothpick, add a few drops of water; microwave egg about 1 minute. With slotted spoon, place poached egg on refried bean covered tortilla. Sprinkle shredded cheddar cheese on egg, spoon Salsa on cheese, add fat free sour cream.
