A heart-healthy potato salad, which tastes great and keeps well.

Recipe Ingredients for Barbara's Heart-Healthy Potato Salad

2 lbs Red Bliss or new potatoes, cubed
3 oz Onion, 1 medium-small, chopped coarsely
2 oz Celery, 1 stalk, chopped
3 oz Green pepper , 1 small, diced
3 oz Dill pickle chips (optional), about 12 chips, chopped
1/4 c Mayonnaise
1/4 c Prepared yellow mustard

Recipe Directions for Barbara's Heart-Healthy Potato Salad

  1. Wash and cut potatoes into approximately 1-inch cubes, leaving skins on.

  2. In a large pot, boil potatoes until tender, about 10-12 minutes.

  3. While potatoes are cooking, prepare the onion, celery, green pepper and pickles, placing them in a 2-quart bowl when cut and chopped to the size(s) you like.

  4. Drain the potatoes when done and add to the chopped ingredients, along with the mustard and mayonnaise.

  5. Stir gently until well mixed.

  6. Refrigerate until served.

  7. Makes six generous 8-ounce servings. (Note: leaving out the pickles will halve the sodium content.)
