Delicious all beef meatballs in sweet and sour sauce, served with white long-grain rice.

Recipe Ingredients for Barbara's Hawaiian Beef Meatballs

1 pound ground beef, 96% lean
2/3 cup cracker crumbs
1/3 cup onion, minced
1/4 cup egg substitute
1 1/2 tsp. salt
1/4 cup skim milk
1 spray Pam
2 tbsp. cornstarch
1/3 cup Splenda Brown Sugar Blend
13 1/2 oz. pineapple, tidbits, drained (reserve liquid)
1/3 cup vinegar
1 tbsp. soy sauce
1/3 cup green pepper, chopped

Recipe Directions for Barbara's Hawaiian Beef Meatballs

  1. Mix thoroughly beef, crumbs, onion, egg substitute, salt, ginger and milk. Shape mixture by rounded tablespoonfuls into balls. Spray non-stick skillet with Pam; brown and cook meatballs. Rmove meatballs; keep warm. Pour any fat from skillet.

  2. Mix cornstarch and Splenda. Stir in reserved pineapple syrup, vinegar and soy sauce until smooth. Pour into skillet; cook over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. Add meatballs, pineapple tidbits and green pepper; heat through.

  3. Serve with white long-grain rice.
