Recipe Ingredients for Barbara's Guinness Stout Beef Stew

2 1/2 lbs. Beef, stew meat, cut into cubes
2 tbsp. olive oil
3/4 cup onions, chopped
4 medium potatoes, peeled and cut into cubes
2 cups carrots, baby, peeled
1 1/2 cup beef broth, low-sodium
12 oz. beer, Stout
1/2 cup flour
1/2 tsp. garlic powder
1 tsp. salt
1/2 tsp. pepper

Recipe Directions for Barbara's Guinness Stout Beef Stew

  1. In a large storage bag, place flour, salt and pepper. Add beef stew meat and shake to coat. In a large skillet, heated on medium to medium-high heat, saute the onions. Remove onions with a slotted spoon, put in crock pot. Brown meat in oiled skillet, and add to crock pot. Add the Guinness Stout and beef stock to crock pot. Add 2 bay leaves, and salt and pepper mixture. Cover, heat on high for two hours or more, turn down to low heat, and continue cooking two more hours. Add potatoes, carrots, garlic powder-if desired-cover and heat on high for 30 minutes or so.

  2. Sample the stew, check vegetables for tenderness. Adjust seasonings as needed. Serve.
