Recipe Ingredients for Barbara's Guinness Pot Roast

1 pound chuck roast
1 tbsp. black pepper, freshly crushed
1 tsp. salt
2 tsp. Olive oil
2 cups Guinness Stout
1 1/2 cups potatoes, thickly cubed
1 cup carrots, thickly sliced
1 small onion, chopped
1 tbsp flour
1/4 cup water

Recipe Directions for Barbara's Guinness Pot Roast

In a large cast-iron dutch oven, well seasoned, heated on medium high heat, put beef and 1/4 cup water. Cook, covered, 30 minutes, uncover and continue cooking until the liquid had mostly evaporated. Add the oil, 2 bay leaves and 1 can/bottle of Guinness Stout. Bring to boil, turn down to a simmer and cook 1 1/2 to 2 hours, or until meat is fork tender and shreddable. Add potatoes and carrots and cook for approximately 30 minutes more or until vegetables are tender. Romove meat and vegetables, pour drippings into saucepan, heat to near boiling, add 1/2 cup cold water and the flour. Stirring, heat to a boil, turn down to simmer for one minute.
