Delicious ginger snap cookies. Makes around 6 dozen.

Recipe Ingredients for Barbara's Ginger Snaps

2 1/4 cup all purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/4 tsp. cloves
3/4 cup Splenda Brown Sugar Blend
3/4 cup Smart Balance Spread
1/4 cup egg substitute
1/4 cup dark molasses
1/4 tsp. salt

Recipe Directions for Barbara's Ginger Snaps

  1. Combine flour, soda, spices and salt in bowl and set aside. In another bowl cream sugar and Smart Balance Spread. Beat in egg substitute and molasses until light and fluffy. Stir in flour mixture just until blended. Chill for 2 hours or more. Preheat oven to 375 degrees.

  2. Shape dough into 3/4-inch balls, roll in granulate sugar, and place on lightly greased or sprayed baking sheets about 2 inches apart. Flatten each ball with the bottom of a glass dipped in sugar. Bake about 8 to 10 minutes, until set.

  3. Makes 6 to 8 dozen cookies.
