Can be served either warm or cold. Using Ditalini pasta, not macaroni.

Recipe Ingredients for Barbara's Ditalini Pasta Salad

2 c. macaroni, cooked and drained
1/4 c. red onion, chopped
1/2 c. celery, chopped
1/4 c. carrots, chopped
2 cloves garlic, minced
1/2 c. olives, black, sliced
1/4 c. Italian parsley, chopped
1/4 c. Parmesan cheese, grated
1/2 c. black beans, canned, drained and rinsed
2 tsp. olive oil
1/4 c. caesar dressing, creamy

Recipe Directions for Barbara's Ditalini Pasta Salad

  1. Cook Ditalini according to package instructions; save one cup of the pasta water, drain pasta.

  2. In a sautee pan, sauted red onion, celery, carrots and garlic.

  3. In emptied pasta pot, add olive oil and return pasta to pot. Add onion mixture, then add olives, parsley, Parmesan or Romano cheese, black beans and pasta water. Stir until well incorporated. Salt and pepper to taste.
