Delish curried chicken and rice dish. Serve with Mango Chutney and shredded coconut, cashews if desired. You can add more curry powder, if you like it more spicy. Can also be made with turkey or shrimp.

Recipe Ingredients for Barbara's Curried Chicken and Rice

2 tbsp. Smart Balance
14 oz. chicken breasts, boneless
1/2 onion, coarsely chopped
1/2 tsp. salt
1/4 tsp. black pepper
1 tsp. garlic, minced
2 tsp. curry powder
3/4 tsp. cinnamon
1/8 tsp. cloves, ground
1 cup rice, white, long grained
2 cups chicken broth, low-sodium
1 cup tomatoes, canned, drained, coarsely chopped
10 oz. cauliflower, frozen
1/2 cup raisins
1 cup peas, frozen
1/2 cup yogurt, plain, non-fat

Recipe Directions for Barbara's Curried Chicken and Rice

  1. Melt the Smart Balance in a 12-inch skillet over moderate heat. Slice the chicken breasts into 1/2-inch wide strips, add to skillet and saute until no longer pink on the outside-5 minutes. With a slotted spoon, transfer the chicken to a plate and sprinkle with the salt and pepper.

  2. Add the onion and garlic to the skillet and saute until soft-about 5 minutes. Add the curry powder, cinnamon, and the cloves, and saute, stirring, 2 minutes or more. Stir in the broth, tomatoes, cauliflower, and raisins. Cover, reduce heat to low, and simmer for 15 minutes.

  3. Return the chicken to the skillet, add the peas, cover, and simmer for 10 minutes. Remove from the heat and stir in the yogurt.
