Recipe Ingredients for Barbara's Cranberry-Orange Bread

2 1/2 cups flour, all-purpose
1 cup Splenda
3 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
3 tbsp. Canola Oil
1/2 cup skim milk
3/4 cup orange juice
4 tsp. orange peel, grated
1/4 cup egg substitute
1 cup cranberries, whole

Recipe Directions for Barbara's Cranberry-Orange Bread

  1. Heat oven to 350 degrees. Grease and flour 9x5x3-inch loaf pan. Measure all ingredients into a large mixer bowl; beat on medium speed 30 seconds, scraping side and bottom of bowl constantly.

  2. Pour into loaf pan. Bake 55 to 65 minutes or until wooden toothpick inserted in center comes out clean. Cool loaf in pan for 5 minutes, transfer to rack to cool completely before slicing.
