Recipe Ingredients for Barbara's Cornbread & Mushroom Stuffed Pork Chops

10 oz. boneless pork chops, about 1-inch thick, trimmed of fat
1/4 cup mushrooms, sauteed
1 spray Pam
1 salt and pepper
1/4 cup bread, cubed

Recipe Directions for Barbara's Cornbread & Mushroom Stuffed Pork Chops

Preheat oven to 400 degrees. Using a sharp knife, slice pockets into chops by slicing horizontally into the side, and almost through to the other side. Season the outside of the chops with salt and pepper. Prepare cornbread stuffing mix according to directions. Set aside to cool. Saute mushrooms in skillet sprayed with Pam. Set aside to cool. Stuff chops with mixture of 1/4 cup sauteed mushrooms and 1/4 cup prepared cornbread stuffing, allowing mixture to overflow out of pockets. Wipe out skillet with paper towels, spray with Pam, heat to medium-high heat, add pork chops and sear on 1 side until browned, 3 to 4 minutes. Flip chops and transfer to baking dish. Finish cooking in oven for 8 to 10 minutes, or until cooked through. Internal temperature of 150 degrees, allow to rest 5 minutes, or until temperature of 160 degrees.
