Recipe Ingredients for Barbara's Coq au Vin

8 oz. bacon, cut into 1 inch pieces
8 1/3 oz. onions, pearl, peeled
7 3/4 oz. mushrooms, sliced
3 tsp. garlic, chopped
2 cups chicken stock
2 cups red wine
2 tbsp. Smart Balance

Recipe Directions for Barbara's Coq au Vin

Brown bacon on medium heat in a dutchoven big enough to hold the chicken, about 10 minutes. Remove the cooked bacon, drain on paper towels. Working in batches if necessary, add onions and chicken, skin side down. Brown the chicken well, on all sides, about 10 minutes. Halfway through the browning, add the garlic and sprinkle the chicken with salt and pepper. Spoon off any excess fat. Add the chiken stock, wine, 3 sprigs of fresh thyme, 3 sprigs of Italian parsley and 2 bay leaves. Add back the bacon. Lower heat to a simmer. Cover and cook for 20 minutes, or until chicken is tender and cooked through. Remove chicken and onions to a separate platter. Remove the bay leaves and herb sprigs, discard. Add mushrooms to the remaining liquid and turn the heat to high. Boil quickly and reduce the liquid by 3/4's until it becomes thick and saucy. Lower the heat, and stir in the Smart Balance. Return the chicken and onions to the pan to reheat and coat with the sauce. Adjust seasoning. Serve with egg noodles.
