Recipe Ingredients for Barbara's Chicken Penne with Zucchini's and Mushrooms

10 oz. chicken breast, boneless, skinless, cubed
2 1/2 oz. onion, chopped
2 oz. mushrooms, brown, sliced thin
3 1/2 oz. zucchini, green, cubed
3 1/2 oz. zucchini, yellow, cubed
1 tsp. garlic, minced
2 tsp. olive oil
1 tbsp. Italian seasoning
4 cups tomato sauce
1/2 cup Parmesan cheese, grated
1/4 cup Mozzarella cheese, part skim milk
8 oz. pasta, Penne

Recipe Directions for Barbara's Chicken Penne with Zucchini's and Mushrooms

  1. Place olive oil in large pot on medium-high heat. Saute onions, and garlic about 5 minutes. Add zucchini's, mushrooms and Italian seasoning. Cook an additional 5 to 7 minutes. Remove with a slotted spoon and keep warm. In same pot cook chicken until no longer pink, add vegetables, stir in tomato sauce. Simmer on low heat for 15 minutes, just to keep warm. Stir in 1/4 cup Mozzarella cheese, mix thoroughly.

  2. Meanwhile, in a large pot, add water and small amount of salt. Bring to boil and add Penne, cooking for 11 minutes. Drain, put in large bowl, spray with Pam Olive Oil. Pour chicken & tomato sauce over Penne. Sprinkle top with Parmesan cheese and serve.
