Lighter version of chicken parmesan. Serve with spaghetti squash and a good spaghetti sauce, tossed salad and crusty bread.

Recipe Ingredients for Barbara's Chicken Parmesan

9 oz. chicken breasts, boneless, pounded to 1/2-inch thickness
1/4 cup skim milk
1/4 cup seasoned bread crumbs
2 sprays Pam
2 tbsp. Parmesan cheese, grated
4 oz. spaghetti sauce, Hunt's Four Cheese Spaghetti Sauce

Recipe Directions for Barbara's Chicken Parmesan

  1. Dip the chicken breasts in the milk, then dredge in bread crumbs. Spray a non-stick skillet with Pam (I use their olive oil spray), heat on medium-high heat; brown the chicken on both sides until golden, about 3 to 4 minutes on each side. Set chicken in baking dish, sprayed with Pam, Olive Oil Spray.

  2. Pour 4 oz. of your favorite spaghetti sauce over the chicken, sprinkle each breast with 1 tbsp. Parmesan Cheese, on each breast. You can add 2 tsp. mozzarella cheese as well. Bake at 350 degrees for about 25 to 30 minutes.
