Recipe Ingredients for Barbara's Chicken Alfredo with Linguine

10 oz. chicken breast, boneless, skinless, cubed
2 1/2 oz. onion, chopped
2 oz. mushrooms, thinly sliced
1 tsp. garlic, minced
1 tbsp. Italian seasoning
1/2 cup white wine, dry
1/4 cup chicken stock
6 oz. Alfredo sauce mix, dry
1 cup skim milk
1 tbsp. Smart Balance
12 oz. linguine, cooked
1/4 cup parmesan cheese, shredded

Recipe Directions for Barbara's Chicken Alfredo with Linguine

  1. In large non-stick skillet, brown chicken, cook thoroughly. Remove from skillet; spray skillet with Pam Olive Oil spray, add garlic, onion, and mushrooms , cook until onion looks transparent. Add chicken and heat thoroughly, remove from heat.

  2. In a saucepan add Smart Balance, skim milk and one package of Alfredo Sauce mix, whisk until smooth. On medium heat, stirring occasionally, cook until it starts to bubble; In skillet with cooked chicken, mushrooms, onion, garlic, add chicken stock and let reduce by half, add wine and reduce again. Add Italian seasoning, stir in.

  3. Pour over cooked and drained linguine, top with cheese and serve.
