Barbara's Light Buttermilk pancakes, serve with Smart Balance and Smucker's Sugar Free Syrup. Makes 3 to 4 servings.

Recipe Ingredients for Barbara's Buttermilk Pancakes

2 cups flour, self-rising
1/2 cup egg substitute
1 1/2 cups buttermilk, 1% fat

Recipe Directions for Barbara's Buttermilk Pancakes

  1. In a large bowl put "Bisquick", egg substitute and buttermilk. Stir well, adding more buttermilk as ncecessary.

  2. Heat griddle on medium-high heat, spray with Pam. When hot, ladle batter onto griddle, turning down heat to medium; make 5" circles. Cook until bubbles form on pancake and bottom is golden brown, flip. Cook another 2 minutes or so.

  3. Place cooked pancake onto platter, cover with foil to keep warm and continue making pancakes; add to platter and cover.
