A delicious breakfast or snack muffiin, lightened up. Add 1 cap Splenda No Calorie Sweetener or Stevia to batter.

Recipe Ingredients for Barbara's Banana-Nut Muffins

2 1/2 cups flour
3 1/2 tsp. baking powder
1 tsp. salt
3 tbsp. canola oil
3/4 cup 1% milk
1 egg
2/3 cup banana
1/2 cup walnuts, chopped

Recipe Directions for Barbara's Banana-Nut Muffins

  1. Heat oven t0 350 degrees, spray 12 cup muffin tin with canola spray, set aside. Mash banans's with a fork, add to bowl, then measure all the rest of the ingredients into a large mixer bowl, add walnuts; beat on medium speed 1/2 minute, scraping the side and bottom constantly.

  2. Fill muffin tin cups 2/3 full with batter. Baked 35 to 40 minutes, or until a toothpick inserted comes out clean. Cool muffins on rack.
