Bulgarian pastry with cheese and spinach

Recipe Ingredients for Banitsa

360 g cheese
180 g yogurt
470 g spinach, canned
96 g butter
10 g red pepper, powder
4 eggs
450 g phyllo dough

Recipe Directions for Banitsa

  1. Drain the spinach from the can and add the cheese as you crumble it in small pieces with hands.

  2. Add the yogurt and the red pepper power. Add also the eggs and then stir everything well until you have a nice homogenous mixture.

  3. Melt the butter in the meanwhile.

  4. You need a baking pot - round or rectangular. Put some butter on the bottom of the pot and spread it all over it, so that the Banitsa doesn't stick to it.

  5. The phyllo dough is usually in the form of sheets. Open the package and lay it on the table.

  6. Sprinkle some butter over the top sheet and spread it a bit over its whole surface with some kind of a cooking brush. Then put some of the mixture also on top of the sheet and spread it mostly in one of the half of the sheet. The mixture should not be too much, as the sheet will break much more easily - it should be like a thin layer.

  7. Now, you have to roll the sheet. Start from the end, covered with the mixture, and fold it towards its other end. Sprinkle again some butter and add some mixture, as you spread it again and again - not too much. Then roll the whole piece in a nice rolled tube.

  8. Take the rolled piece carefully and place is in the baking pot - one end is in the middle and try to curve the rest of the piece around this end, so that looks like swirling.

  9. Roll another sheet with the mixture and add it to the first one, as you keep the same shape - rotating it around the center. Every time you add the next rooled piece make sure to cover the end of the previous one so that it does not ''open'' during baking.

  10. Repeat the same procedure with the rest of the sheets that you have.

  11. Sprinkle some butter over the whole Banitsa. Bake in the oven on 170 degrees.

  12. Serve it alone or together with some yogurt.
