Recipe Ingredients for Bananas Foster Sourdough Bread Pudding

4 slices sourdough bread, crusty, cubed 1/2 inch about 4 cups
1/4 cup brown sugar
3 tbs brown sugar
2 eggs, or equivalent egg substitute
12 ounce evaporated skim milk
1/2 cup skim milk
1 ounce rum, 2 tbs
1 banana, quartered and sliced
1/8 tsp cinnamon, plus a dash

Recipe Directions for Bananas Foster Sourdough Bread Pudding

  1. Put bread cubes in a large bowl and set aside.

  2. Combine 1/4 plus 2 tbs sugar and egg. Whisk until sugar is disolved. Whisk in milk & rum, and a dash of cinnamon. Pour mix over bread and let stand for 10 min. Stir in banana.

  3. Coat 1.5 quart dish with nonstick spray and pour mix into dish. Combine remaining tbs sugar and cinnamon in small bowl. Mix and sprinkle over pudding.

  4. Place dish in large pan filled with 1 inch of hot water. Bake uncovered at 350 for about 55 minutes or until sharp knife inserted halfway between the center and edge of the dish comes out clean. Allow to cool at room temp for 45 minutes before serving.

  5. Serve pudding warm or room temp. Refrigerate leftovers.

  6. Optional toppings include the sauce below, Best Rum Sauce, french vanilla ice cream, and/or whipped cream. (Sauce, ice cream & whipped cream are not included in nutrition facts of this recipe).

  7. Optional Sauce: Place 2 tbs butter or butter substitute, 2 tbs brown sugar, and 1 (1-ounce) rum, 2 tbs [14037] in a small pot. Cook & stir over medium heat for a minute or two until hot & runny.
