Recipe Ingredients for Banana Walnut Muffins

1/3 cup skim milk
1/4 cup vegetable oil
1 large egg
2 cups all-purpose flour
1/2 cup brown sugar
2 tsp baking powder
1/2 tsp salt
2 medium bananas, very ripe
1/2 cup walnuts, chopped

Recipe Directions for Banana Walnut Muffins

  1. mash banana with milk

  2. beat in oil and egg with fork or wire whisk

  3. stir in flour, sugar, baking powder and salt just until moistened (will be lumpy)

  4. divide batter evenly into muffin cups

  5. bake 20-25 minutes
