Recipe Ingredients for Banana Walnut Muffin Scoops

2 large bananas
1 teaspoon vanilla extract
2 tablespoons maple syrup
1 cups whole wheat flour
1/2 cup ground walnuts
1/2 cup oats
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup walnuts
1/2 cup vegan chocolate chips

Recipe Directions for Banana Walnut Muffin Scoops

  1. 1. Preheat your oven to 350 degrees F. Line a cookie sheet with parchment paper and set aside.

  2. 2. In the bowl of an electric mixer, use the paddle attachment to mash the bananas on high speed until gooey. Then mix in the vanilla extract and maple syrup.

  3. 3. In another bowl, whisk together the flour, hazelnut meal (if you don't have it -- just process some other nuts in a food processor until flour-like), oats, salt, baking powder, and baking soda.

  4. 4. Add the dry ingredients to the wet and mix until well incorporated.

  5. 5. Stir in the walnuts and chocolate chips.

  6. 6. Bake for 16 to 18 minutes until golden brown. Let cool a bit before serving.
