Banana Walnut Muffin With sour cream, agave sweetner and low fat butter

Recipe Ingredients for Banana Walnut Muffin

2 medium bananas
1 cup whole wheat pastry flour
1 cup flour
1 tablespoon baking powder
1 cup light brown sugar
1 tablespoon Blue Agave
1/4 teaspoon salt
1/2 cup egg whites
2 tablespoons butter
1 cup low fat sour cream
1 cup walnuts
1 tablespoon ground cinnamon
1 tablespoon vanilla extract

Recipe Directions for Banana Walnut Muffin

  1. Heat oven to 375. Spray a muffin pan with light cooking oil spray such as Pam or Smart Balance Canola oil spray and set aside. You can also use muffin paper cups.

  2. In a large bowl combine salt, flour, cinnamon and baking powder. In another bowl melt the butter or use room temperature butter and fold in eggs, vanilla, sugar, sour cream and agave. Mix in batches, the wet ingredients with the dry ingredients and once everything has been stir gently and blended, use your hand and a wooden spoon, then fold in the nuts (make sure they are chopped into small pieces, about 1/2 an inch.

  3. Once everything is blended, pour the mixture into the paper muffin cups or greased pans and tap the pan twice on a hard surface to remove any extra bubbles that might pop up in the batter.

  4. Place in center rack of oven and let cook for about 35 minutes. Times and oven temps may vary. Stick a knife into a muffin and if it comes out clean then it is done.

  5. Enjoy!
