Low fat banana walnut mini muffins

Recipe Ingredients for Banana Walnut Mini Muffins

0.5 cup Egg Beaters
18 packet SPLENDA No Calorie
3 medium banana Organic Bananas
0.33 cup FAGE Total 0%
2 tsp 100% Pure Canola Oil
2 tsp Vanilla Extract
1.75 cup Organic Whole Wheat Flour
1 serving Baking Powder
0.5 tsp Baking Soda

Recipe Directions for Banana Walnut Mini Muffins

  1. Preheat oven to 325

  2. Spray muffin tin with Pam and lightly flour

  3. Beat Egg Beaters and Splenda in bowl until thick and light, about 5 minutes

  4. Mix in mashed bananas, yogurt, oil and vanilla

  5. Sift dry ingredients and add to wet mix, beat until blended

  6. Spoon into muffin tins to 2/3 full

  7. bake until golden brown and tester inserted comes out clean {about 25-30 minutes}
