Banana Walnut Loaf Recipe

a light oil and butter free version of banana bread. optional to add 1/4 to 1/3 cup chocolate chips

Recipe Ingredients for Banana walnut loaf

1 cup whole wheat flour
1/4 cup flour
1 1/4 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/8 tsp salt
1 tsp vanilla
2 eggs
2 ripe bananas
4 oz brown sugar
2 1/5 oz unsweetened apple sauce
3 T canola oil

Recipe Directions for Banana walnut loaf

  1. Preheat oven to 350 degrees F

  2. Mix dry ingredients together (flour, baking powder, baking soda, cinnamon and salt)

  3. In a separate bowl, mix eggs, bananas, sugar, apple sauce and vanilla

  4. Add dry ingredients to wet, just until blended

  5. Add chopped walnuts

  6. Pour into greased loaf pan (approx 8x4x3)

  7. Bake for 40 to 50 min

  8. Cool in pan on rack for 10 min

  9. Unmold and cut when completely cool
