Made with part wholemeal self rasing flour for higher fibre content and wlanuts for added crunch

Recipe Ingredients for Banana & Walnut Loaf

130 g self raising flour
100 g wholemeal flour
390 g banana, mashed
28 g splenda
30 g soft brown sugar
58 g fat free yogurt
1 egg
1/2 tsp vanilla extract
45 g walnuts, chopped

Recipe Directions for Banana & Walnut Loaf

  1. Preheat oven to 175 C. Grease loaf tin or acke tin

  2. sieve together flour, addd chopped nuts.

  3. In another bowl, beat banana, suger, egg & vanilla until smooth. Mix in yogurt

  4. pour mixture into dry mix and gently fold through until flour is combined.

  5. transfer mixture into greased tin

  6. bake for 45-55 minutes until skewer or knife emerge clean. May need to reduce heat and cook for another 10- 15 mins if slightly softer inside
