Recipe Ingredients for Banana and walnut loaf

80 g margarine
110 g sugar
1 egg
5 g orange peel, grated
5 g lemon peel, grated
225 g flour
2 teaspoons baking powder
4 medium bananas
50 g walnuts

Recipe Directions for Banana and walnut loaf

  1. preheat oven to gas mark 4, 350F, 180C

  2. Cream the butter and lard with the sugar till light and fluffy, then beat in the beaten egg a little at a time.

  3. Add the grated rinds of a well-washed orange and a lemon.

  4. Sift the flour and baking powder and fold into the creamed mixture using a metal spoon.

  5. In a separate bowl mash the bananas then fold them into the cake mixture together with the chopped walnuts.

  6. Spoon the mixture into a well-buttered loaf tin.

  7. Bake for about 50-55 minutes. Allow to cool in tin for 10 minutes then turn onto a wire rack.
