Recipe Ingredients for Banana, Walnut & Choc-Chip Mini Muffins

300 g Self Raising Flour
2 tbls Light Brown Sugar
60 g Walnuts, chopped
100 g Milk Chocolate Chips
250 g Banana, peeled
3 tbls Vegetable Oil
2 Eggs, lightly beaten
125 ml Sour Cream

Recipe Directions for Banana, Walnut & Choc-Chip Mini Muffins

  1. Preheat the oven to 200c/400f/gas mark 6. Grease a 12-cup muffin tin or line the cups with paper muffin cases.

  2. Mix the flour, sugar, walnuts and chocolate chips in a large bowl. In a separate bowl, mash the bananas until fairly smooth, then stir in the vegetable oil, eggs and sour cream.

  3. Add the wet ingredients all at once to the dry ingredients and mix until just combined.

  4. Spoon the batter into the prepared muffin cups, dividing it evenly. Bake in the oven for about 12 mins (20 mins for normal muffins), or until well risen. Cool in the tin for 10 mins, then turn out onto a wire rack. Serve warm or cold.
