Low fat version of banana nut bread.

Recipe Ingredients for Banana and Walnut Bread, Low Fat

5 medium bananas
1/2 cup roasted walnuts, unsalted
1 tablespoon baking powder
1/4 teaspoon of salt
1 tablespoon of cinnamon
1 1/4 cup whole wheat pastry flour
1 cup of white flour
1 cup of light brown sugar
1/4 cup of Splenda
1 medium egg
6 tablespoons of Smart Balance Butter
1 cup of lowfat milk (1%)
1 tablespoon of vanilla extract

Recipe Directions for Banana and Walnut Bread, Low Fat

  1. Preheat oven to 350 degrees.

  2. Place flour (wheat and white) into large mixing bowl and use a whisk to blend flour together. Add sugar, salt, cinnamon and whisk everything together by hand.

  3. In a medium boil, melt butter and let cool. Afterwards, add milk, vanilla extract to butter and whisk well. Mash well ripened bananas in another bowl and if needed, puree it in a mixer then add the smooth banana mixture to the liquid. Mix well bananas and liquid together.

  4. Make a well in the middle of the flour and begin adding the liquids by batches (3) until everything is blended.

  5. Once mixed by hand for 1 minute, add walnuts to batter. Pour batter into either muffin pan or 9x12 baking pan. If making muffins cook at 350 for 40 minutes. If baking full cake, bake for 55 minutes.

  6. Let cool for 2 hours before cutting cake.
