Healthier spin on classic Banana Walnut muffins

Recipe Ingredients for Banana Walnut Bread- Healthy

2 cup White Whole Wheat Flour
4 large (8" to 8-7/8" long) Bananas
6 tbsp Agave Nectar
8 tbsp Salted Butter
2 oz Eggs
1 cup pieces or chips Walnuts, English
1 cup Quinoa Flour
1 tsp Vanilla Extract
7 tbsp Salted Butter
1.25 tsp Baking Soda

Recipe Directions for Banana Walnut Bread- Healthy

  1. Set oven to 350 degrees; grease and flour muffin pan. (6 or12)

  2. Toast walnuts 4 minutes ;Mash bananas

  3. Cream butter with mixer; add agave nectar, eggs, vanilla then mashed bananas; Set aside

  4. In separate bowl, mix dry ingredients with wet batter. Add walnuts.

  5. Spoon into muffin pan. Bake approximately 18 - 25 minutes depending on size.

  6. Can be made into loaf. Bake approx. 40 + minutes.
