Recipe Ingredients for Banana Walnut Bran Muffin

3/4 c whole wheat flour
3/4 c all purpose flour
1/2 c wheat bran
90 g oat bran
1 tsp baking soda
2 tsp baking powder
1/8 tsp salt
2 tsp cinnamon
1 egg
2 egg whites
1/2 c applesauce
3 bananas
1 tbsp olive oil
1 c lowfat buttermilk
2 tsp vanilla extract
2 tbsp molasses
1/2 c chopped walnuts
1/3 c ground flaxseed
1/3 c golden raisins

Recipe Directions for Banana Walnut Bran Muffin

  1. Mix dry ingredients

  2. Mix wet ingredients

  3. Mix until just moistened

  4. Fold in walnuts and raisins

  5. Bake at 375F for 18 minutes
