This is a recipe I found that I adapted to make a bit healther and lower calorie than the original recipe was.

Recipe Ingredients for Banana-Strawberry Muffins

2 eggs
1 cup unsweetened applesauce
1/2 cup honey
1 tsp. vanilla extract
3 bananas
1 1/2 cup whole wheat flour
1/2 cup wheat germ
1/8 cup flaxseed meal
1 teaspoon baking soda
1 tablespoon ground cinnamon
1 cup sliced strawberries

Recipe Directions for Banana-Strawberry Muffins

  1. Preheat oven to 375 degrees F. In a medium bowl, mash bananas. Add the eggs, applesauce, honey, and vanilla and whisk together.

  2. Combine flour, wheat germ, flaxseed meal, baking soda and cinnamon in a separate bowl. Stir into the banana mixture just until moistened. Add the strawberries and stir briefly. Spoon batter into lined muffin tins.

  3. Bake for 15 minutes in preheated oven, or until the tops of the muffins spring back when pressed slightly. Cool in muffin tin.
