Recipe Ingredients for Banana-Strawberry Muffins

2 eggs
1/2 c unsweetened applesauce
1/4 c oil
1/2 c brown sugar, packed
1 tsp vanilla
3 bananas, mashed
80 grams oat bran,1/2 cup
1/2 c oats, rolled
1/2 c oat flour
1/2 c whole wheat pastry flour
1 tsp baking soda
1 tsp cinnamon
1 c strawberries, sliced

Recipe Directions for Banana-Strawberry Muffins

  1. Preheat the oven to 375 degrees. Grease jumbo muffin pan.

  2. In a large bowl, whisk together the eggs, applesauce, oil, brown sugar, vanilla and bananas. Combine the flour, oats, oat bran,oat flour baking soda and cinnamon. Stir into the banana mixture until moistened. Stir in the strawberries until evenly distributed. Spoon batter into muffin cups.

  3. Bake for 20 minutes or until tops of the muffins spring back the pressed lightly.
