Recipe Ingredients for Banana Spelt Walnut Bread

0.5 cup Vegetable Oil, Canola
2 large Egg, Whole
4 oz Sugar Dark Brown
157 grams Spelt Flour
2 oz Brown FlaxSeed Meal
2 medium (7" to 7-7/8" long) Bananas
1 tsp Baking Powder
0.5 tsp Baking Soda
0.5 tsp Salt, Table
0.5 cup Chopped Walnuts
1 tsp Shortening

Recipe Directions for Banana Spelt Walnut Bread

  1. Beat together in small bowl:

  2. 2 bananas, smashed with fork

  3. 2 eggs

  4. 1/2 cup vegetable oil

  5. In larger bowl mix:

  6. 1 1/2 cups spelt flour

  7. 1/4 cup flax seed meal

  8. 1 teaspoon baking powder

  9. 1/2 teaspoon baking soda

  10. 1/2 salt (optional)

  11. 1/2 cup packed dark brown sugar

  12. Mix dry ingredients well. Stir in wet ingredients in small bowl, then stir in walnuts. Grease loaf pan with shortening and pour in batter.

  13. Bake at 350 degrees for 45-50 minutes. Should be dry in center when done. After baking, remove from pan and immediately wrap in foil for at least an hour.
