An easy healthy breakfast or dessert muffin.

Recipe Ingredients for Banana Soy Muffins

2 cups whole wheat pastry flour
1/2 tsp salt
1 tbsp baking powder
2 bananas
1/3 cup applesauce
1/4 cup honey
1/2 cup soy milk

Recipe Directions for Banana Soy Muffins

  1. Preheat oven to 350 and grease a 12-cup muffin tin (or line with paper).

  2. Combine the flour, salt and baking powder in a large mixing bowl.

  3. Puree the bananas in a food processor or blender and transfer to a medium mixing bowl.

  4. Add the oil, honey and soy milk and mix well.

  5. Pour the banana mixture into the dry ingredients and stir just until moistened.

  6. Pour the batter into greased muffin tins and bake for 30 minutes, until lightly brown and firm to touch.
