These muffins are delicious, especially right out of the oven! Although the texture is a little different than what you would get with a high calorie muffin, it is still a really tasty and satisfying muffin. If you don't mind less sweetness you could probably use less sugar. The original recipe called for 1/2 cup raisins, but I wanted a chocolate fix so I cut down the raisins and added a little chocolate. Yum!

Recipe Ingredients for Banana Raisin Oatmeal Muffins

1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 cup oats
1/3 cup Raisins, Seedless
1 egg
1/4 cup unsweetened applesauce
1/3 cup brown sugar
1 cup mashed bananas
1 tsp vanilla
2 tbsp chocolate chips

Recipe Directions for Banana Raisin Oatmeal Muffins

  1. Makes 12 muffins - grease muffin tin and preheat oven to 400 degrees F.

  2. 1. In small bowl, combine flour, baking powder, baking soda and cinnamon.

  3. 2. In a larger bowl, combine egg, applesauce, mashed banana, vanilla and brown sugar. Stir well.

  4. 3. Add flour mixture to liquids and stir enough to moisten; add oats and raisins.

  5. 4. Pour into prepared muffin tin. Bake for 20-25 minutes.
