Recipe Ingredients for banana raisin muffins

1.25 cup Flour
0.75 cup dry Old Fashioned Quaker Oats
2 large (8" to 8-7/8" long) Bananas
12 tsp SPLENDA Brown Sugar Blend
1.5 tsp Baking Powder
0.5 tsp Baking Soda
0.25 tsp Salt, Table
3 large Egg, White
0.33 cup Vegetable Oil, Canola
1/2 cup (not packed) Raisins, Seedless
1/2 cup (not packed) Raisins, Seedless
1 tsp Vanilla Extract

Recipe Directions for banana raisin muffins

  1. Sift the flour, salt, baking soda and baking soda in a large bowl. Add oats.

  2. Combine Splenda blend, bananas, egg whites, vanilla, oil, cinnamon and nutmeg in another bowl. Fold into flour mixture. Batter should be lumpy, not too smooth. Add a few Tbsp milk if the batter is very thick. Add raisins at the end.

  3. Fill muffin tins to 3/4 full and bake at 350 for 25-30 minutes.
