Muffins made with over ripe bananas and raisins. Flax seed should be ground before mixing into batter.

Recipe Ingredients for Banana Raisin Muffins

1 cup old fashioned oats
1 cup raisins
1 cup fat free milk
3/4 cup splenda
2 bananas
1 1/4 cup plain flour
1 tbsp baking powder
1 tsp salt
1/4 cup egg beaters
2 tbsp flax seed

Recipe Directions for Banana Raisin Muffins

  1. Turn oven to 350 degrees and let preheat. Place oats, raisins and milk into a small bowl and let soak for 10 minutes or more. Put all dry ingredients into a separate bowl and blend together with a whisk or other utensil. Add all wet ingredients and stir.

  2. Bake in muffin pans approximately 20 minutes. Test for doneness.
