Recipe Ingredients for Banana-pumpkin muffins

2 large BANANAS
1/2 cup pumpkin
1 EGG
2 T canola oil
1/3 cup skim milk
1/3 cup sugar
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 cup wheat flour
1/2 cup all-purpose flour
1 T brown sugar
1/4 cup almonds
1 tsp cinnamon

Recipe Directions for Banana-pumpkin muffins

  1. mash bananas and pumpkin together

  2. add egg, oil, milk, sugar, salt, baking soda, and baking powder. Beat well.

  3. Gently blend in flour and stir for 20 seconds.

  4. pour into 12-muffin tin

  5. mix brown sugar, cinnamon, and chopped almonds together, and sprinkle on top of muffins

  6. bake 20 minutes at 350 degrees.
