To further reduce calories, you can cut out the walnuts :) Tip #1: To make the bananas easier to mash, gently squeeze them in your hands before peeling. Tip #2: If there are any spaces left without batter, fill them with water or dried lentils before placing the trays in the oven to avoid warping the tray.

Recipe Ingredients for Banana Pumpkin Mini-Muffins

2 cups multigrain flour
3/4 tsp baking soda
1/4 tsp salt
1/2 teaspoon nutmeg
1/2 cup Splenda brown sugar blend, firmly packed
1/4 cup pumpkin puree
2 tablespoons canola oil
1 large egg, lightly beaten
1/2 cup fat free milk
1 tsp vanilla extract
3 medium-sized ripe bananas, mashed
1/2 cup walnuts, pieces (optional)

Recipe Directions for Banana Pumpkin Mini-Muffins

  1. Preheat oven to 350 degrees. Coat three mini-muffin pans with non-stick cooking spray.

  2. Whisk flour, baking soda, nutmeg, and salt together in a large bowl. Stir in brown sugar.

  3. In a medium bowl, combine pumpkin puree, oil, egg, milk, and vanilla extract. Add these ingredients to the dry ingredients. Stir in mashed bananas.
