Recipe Ingredients for Banana protein muffins

1 cup all-purpose flour
1/2 cup quick-cooking oatmeal
1/4 cup packed brown sugar
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1 Nonstick cooking spray
1/3 cup skim milk
1 egg
3 egg white
1 tablespoons cooking oil
2 large ripe banana, cut up
3 scoops whey protein

Recipe Directions for Banana protein muffins

  1. Preheat the oven to 400 degrees.

  2. Use your favorite whey flavor- vanilla, chocolate, or strawberrry work well.

  3. In a large mixing bowl stir together the flour, oatmeal, brown sugar, baking powder, cinnamon, whey protein, and salt. Set aside.

  4. In a blender container combine milk, egg, and oil. Cover and blend smooth.

  5. With blender running, add banana and blend into mixture.

  6. Pour into dry ingredients and stir just until moistened. Fill muffin pans or cups 2/3 full. Bake about 20 minutes or until a wooden toothpick inserted in center comes out clean.

  7. Makes 10 to 12

  8. Optional: Top with crushed bran cereal or any crushed cereal- add topping after several minutes in the oven

  9. Optional: add fibasure or a flavorless fiber supplement
