This dessert has been re-named "Banana Split Casserole" by a friend, because it tastes just like that, only much lower in fat and calories!

Recipe Ingredients for Banana Pineapple Delight

64 grams Sugar-Free Vanilla pudding mix (two 4-serving boxes)
16 ounces Reduced Fat Vanilla Wafers, crushed (enough wafers to make 2 cups of crumbs)
1/2 cup light butter, melted (Land O Lakes brand)
3 bananas
1/4 cup lemon juice
15 1/4 ounces crushed pineapple in its own juice, drained
8 ounce whipped topping, lite

Recipe Directions for Banana Pineapple Delight

  1. Prepare pudding mix according to package directions using fat-free milk. Set aside in refrigerator until needed.

  2. To prepare crust:

  3. Combine crushed vanilla wafers and melted margarine. Pat into the bottom of a 13" x 9" dish. Set aside in refrigerator until needed.

  4. To prepare finished product:

  5. Peel and slice bananas. Place slices in lemon juice to prevent browning.

  6. Spread vanilla pudding over crust.

  7. Layer sliced bananas over pudding.

  8. Spread drained pineapple over bananas.

  9. Cover all with whipped topping.

  10. Cover and refrigerate until serving.

  11. *Optional*: Sprinkle any or a mixture of the following on top of whipped topping: drizzled chocolate sauce, chopped nuts, fresh sliced strawberries or other favorite berries, toasted coconut, or anything else you might like on a banana split. Enjoy!
